Imitation Cafe Rio!

This tastes super close to the real thing... Mmmm yup I'm craving it right now!

**Cafe Rio Dressing
1 Hidden valley buttermilk ranch dressing packet (make per recipe--so buy the buttermilk and mayo also)
1 Bottle of Green Salsa Verde Salsa
1/2 bunch cilantro
1 clove minced garlic
juice of 1 lime
Use a food processor to blend all ingredients

**Cafe Rio Chicken
1 small bottle Kraft Italian dressing
1 T. Chili powder
1 T. Cumin
3 cloves minced garlic
5 lbs chicken breasts
Cook all together in a crock pot for 4 hours, shred meat and cook 1 additional hour.

**Cafe Rio Pork
Cook 2 1/2-3 lbs of pork roast in a crock pot seasoned with
1/8 tsp garlic salt
1/8 tsp of pepper
Add about 1/3 C sprite.
Cook on high for 4 hours
Drain off water and shred
Add 1 Small can of diced chilies and 1/2-1 C brown sugar
Allow to cook 15 min. longer.

**Cafe Rio Rice
6 C. water
1 small can green chilies -or equivalent fresh
4 tsp. chicken bouillon
4 tsp minced garlic
1/2 bunch cilantro
3/4 tsp salt
1 T. butter
1/2 onion
3 C. rice
Blend cilantro, green chilies, and onion together in food processor. Bring water to a boil and add all ingrediants, simmer covered for 30 minutes.

Heat flour tortillas and layer on lettuce, the rice, your meat of choice, and any of the following: sliced avacados, black beans, tomatoes, cheese - Then top with the cilantro dressing.

You will LOVE it!
