Pina Colada Fruit Salad

This is so simple and super yummy! We all loved it!
I found this in one of my old cooking magazines.

Ingredients

  • 1-1/2 cups green grapes
  • 1-1/2 cups seedless red grapes
  • 1-1/2 cups fresh blueberries
  • 1-1/2 cups halved fresh strawberries
  • 1 can (8 ounces) pineapple chunks, drained (I used the big can, 16 oz I think?)
  • 1/2 cup fresh raspberries
  • 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
  • 1/2 cup sugar
  • 1/2 cup pineapple-orange juice
  • 1/8 teaspoon almond extract
  • 1/8 teaspoon coconut extract

Directions

  • In a serving bowl, combine the first six ingredients. In a small bowl, whisk the pina colada mix, sugar, juice and extracts until sugar is dissolved. Pour over fruit; toss to coat. Chill until serving. Yield: 9 servings.
~I didn't measure out the fruit, I just did a bunch of grapes, probably close to 2 cups of each and a bunch of strawberries. I omitted the blueberries and instead put in a big can of drained mandarin oranges. If you are going to eat it all at once, sliced bananas would go nicely too. Also all I could find was pineapple-orange-banana juice so I substituted that. It was so so so good! This can be tweaked very easily to your likes and what you have on hand. It makes a ton of "sauce", I could have easily halved it. And its pretty sweet, I think next time I'll cut the sugar amount in half or omit it all together. Definitely a new favorite! Could easily be served as a desert over angel food cake or even frozen yogurt - the sauce is that good!

Peach Vanilla Syrup

Ingredients:
  • 5 cups peaches(pureed)
  • 2 cups sugar
  • 2 T. lemon juice
  • 2 t. vanilla

Directions: Bring first 3 ingredients to a boil, and simmer for 5 minutes, stirring constantly. Add vanilla and stir well. Pour into hot, sterile jars and screw the hot lids and rings on tight.
Process the syrup in a boiling hot water bath for ~15 minutes, to make sure that any bacteria is killed. Start timing when the water comes to a full boil. Set jars out and listen for the pop to ensure they have sealed.

*This is what I will be doing tomorrow with my sister so I will post a picture when we are done! I'm super excited, I think its going to be way yummy!!


**Okay update! We made this and it was so good! The first batch, we forgot to add vanilla, oops! But it still tastes good. In the other batches, we put it in, but you can't really taste it, so if you want a stronger flavor, add more. We doubled it, so 10 cups of pureed peaches, and we got 7 pints out of it. We ended up with about 21 pints when it was all said and done.

Banana Orange Icee

1 banana
1 1/2 cups orange juice
tray of ice cubes

Mix well in blender. Yum!

* This is what I make for the boys instead of giving them popsicles on hot days - its just a little bit healthier.

Watermelon Lemonade - Magic Bullet style

I use the "Party Mug" and put like 2 or 3 ice cubes in the bottom, (unless I'm using frozen watermelon, then I don't add them), put some watermelon in so its about half full and then fill it up with lemonade. I bought some Hawaiian Punch lemonade, its not very strong, but I was thinking about using frozen lemonade concentrate (mixed up with water in a pitcher first of course!) cause it has a little bit stronger flavor. Last night, Dall had me put blueberries and raspberries in his and it was still good! I wonder, the syrup that is used in like the flavored lemonades at Applebee's, it might be good in there too probably?
