- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground cinnamon
- 1 egg
- 1 cup milk
- 1 cup mashed ripe bananas (about 2 medium)
- 3 tablespoons canola oil
- 2 teaspoons lemon juice
- Maple syrup, optional
- In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. In a small bowl, whisk the egg, milk, bananas, oil and lemon juice; stir unto dry ingredients just until moistened.
- Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Serve with honey pecan butter and syrup if desired.
I didn't make the honey butter due to lack of time but I'm sure it would be delicious! My first bite was not what I expected. It was warm and gooey but so yummy. We loved these! This recipe made about 12 pancakes.
