Perfect lunch or dinner during the summer when its hot and you don't want to cook!
What you need:
Rice paper wraps (Found in the Asian food aisle, mine are called Spring Roll Wrappers)
Avocado
Lettuce
Cucumbers
Carrots
Sriracha, optional
Sweet Chili Sauce
First:
Slice cucumbers into long, thin matchsticks. Do the same with the carrots, or just buy matchstick carrots at the grocery store, much easier! Slice your avocado into thin slices as well. Make sure you have all your ingredients prepped and ready to go. Opt for a leafier lettuce that will lay flat (baby spinach, green leaf lettuce) as opposed to iceberg lettuce. It will be easier to wrap.
Second:
Follow the directions found on the back of the rice paper packaging. Which basically is to soak the rice paper in hot water for 15-20 seconds until soft, (think wet paper towel). They will tear easy! Carefully remove from water to clean kitchen towel, dab with paper towel to remove any extra water.
Third:
Carefully lay thin slices of avocado, close together. Top with lettuce leaves, I like add a thin squeeze of Sriracha at this point cause I like mine spicy! Then layer with cucumber sticks and carrots.
Fourth:
Carefully fold in the sides of the rice wrap. Start at the bottom and gently fold up the rice wrap over the filling, trying to wrap it as tight as possible. Roll up and off the towel.
Fifth:
Serve with sweet chili sauce. So yummy! Enjoy!
